Creamy Cauliflower Dill Mash
We made this for our JC supper a few weeks ago, and everybody loved it. It is extremely simple, and is a good substitute for mashed potatoes if you want something lighter and less starchy. And you could substitute in another herb such as parsley or thyme for dill depending on what you were making it with, but the dill is divine.Oh, and it only takes like 10 minutes! We cooked for about 15 people, so we did a triple recipe, but we also had another starch. I would recommend doing a double recipe if you are feeding 5 or so people, because it makes great leftovers as well.
Ingredients:
1 head cauliflower, cut into florets
1 cup grated mozzarella or Parmesan cheese (or a combination of the two)
2 oz cream cheese
generous helping fresh, chopped dill (3-4 tbsp)
3 tbsp butter
salt & freshly cracked pepper to taste
Directions:
Boil the cauliflower until well done, 6-10 min.
Strain out the water, add the butter and mash up the cauliflower
Add the remaining ingredients and mash until fully combined and creamy. The cheese will melt from the heat of the cauliflower.
Serve in place of mashed potatoes, or with whatever you are having for dinner!
