Sand Tarts

- Happy Belated Valentines Day! -


Since yesterday was Valentines day, and I had wanted to make cookies for it, but had ran out of time, I made some Valentines cookies today. This is the recipe for one of my very favourite chocolate cookies my grandma always makes. They are fudgy and full of chocolate, and they are always one of the most tempting things in her deep freeze. She usually makes them with a chocolate butter icing, but since I wanted to have some colour in the mix, I did a vanilla butter icing with a little cream cheese, and a touch of pink. 




Grandma Weber's Sand Tarts:

Ingredients:
  • 1 lb butter (softened)
  • 2 1/2 cups sugar
  • 2 eggs
  • 3/4 cups cocoa
  • 4 cups flour
Directions:
  1. Cream together the butter and the sugar. Beat in the eggs, then the cocoa, and then gradually beat in the flour.
  2. Roll out the dough on a floured surface to your desired thickness (they will not really rise while baking), and cut them out into shapes. My grandma always does little stars, but as you can see I did hearts today. And you can do just whatever you want.
  3. Bake the cookies in the oven for appx 8 minutes, or until they are no longer shiny on the top, and some have slight puffs forming under the surface. Do not over bake them.
  4. While the cookies are baking, whip up a chocolate icing, and once the cookies are completely cool, sandwich them together.
For the Icing:
  • Chocolate: Cream about 1/2 cup softened butter, and gradually add about 2 cups icing sugar, a little milk and vanilla, and 4-5 tbsp cocoa power.
  • Pink: Cream about 1/2 cup softened butter and 1/4 cup cream cheese. Gradually add 2-3 cups icing sugar, a little milk and vanilla, 2-4 tbsp cocoa powder, and a few drops of red food colouring, until it looks and tastes just as you want.
