Grandma's Lebkuchen


Lebkuchen is a beautiful cookie recipe from Germany, enjoyed especially at Oktoberfest and at Christmas. There are many different recipes for it which all taste different, but this is my Grandma's and the one I like best.


Lebkuchen

Wet ingredients
  • 1 cup honey
  • ¾ cup firmly packed brown sugar
  • 1 egg
  • 1 tsp grated lemon rind
  • 1 tsp lemon juice 
Dry ingredients
  • 2 cups flour 
  • 11/2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp cloves
  • ½ tsp ginger
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup golden raisins
  • ½ cup chopped almonds

Icing
  • 1 cup icing sugar
  • 2 tsp lemon juice
  • Milk if needed
Directions:
  1. Heat honey in small sauce pan to melt. Stir in brown sugar, egg, lemon rind and 1 tsp of lemon juice.
  2. Mix dry ingredients together well. Add to wet with raisins and almonds. 
  3. Cook on a cookie sheet. Bake at 350 for 30 min. Check at 20 to 25 minutes (don’t burn) It shouldn’t get too brown. It should be a little firmer than a cookie. Mix icing sugar and lemon juice( a little milk if necessary
  4. Ice while still warm and cut it while its warm.
