Cinnamon Honey Cookies
This is a beloved recipe of mine that I found many years ago, and have made ever since. They are simple cookies with just a touch of cinnamon and honey flavor, just how you'd think a honey cookie should taste. They are perfect for when you want something sweet, but not too sweet.
Ingredients:
½ cup butter, softened
½ cup brown sugar
½ cup creamed honey
1 egg
1 ½ cup flour
½ tsp baking soda
big pinch of salt
1 tsp cinnamon
Directions:
- Preheat your oven to 350 degrees F, and grease two large baking sheets with butter or canola oil.
- In a small bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In a large bowl, cream together the butter, brown sugar and honey, stir in the egg, and then stir in the dry ingredients, gradually.
- Scoop the dough in heaping teaspoonfuls onto the prepared pans with at least 1-2 inches in between each mound of dough.
- Bake in preheated oven for 8 - 10 minutes, or until risen and set, and just beginning to brown.
- Repeat steps four and five until all the dough is used up. The cookies will be good for a few days in the fridge, but keep very well in the freezer!
