Polish Cucumber Salad
This
simple yet delicious salad is a great as a side to almost any meal, due
to its subtle flavour. I found it in a Polish cook book I bought from
the Library, after searching for
a great cucumber salad for a very long time. I made a double recipe for
our Christmas day meal, and I could have easily made more!
Ingredients:
2 medium cucumbers
½ cup sour cream
Juice of a ½ lemon
Salt & pepper
3 scallions, chopped finely
Directions:
1. Peel and thinly slice the cucumbers.

2. Set them in a sieve, sprinkle them with
salt, and leave them for a few minutes. Rinse them and pat dry with kitchen
paper or a clean kitchen towel.
3. In a large bowl, whisk together the sour
cream, lemon juice and chopped scallions.
4. Add the cucumbers to the sour cream
mixture. Toss, and chill until ready to serve.
Serves 4-6 as a side.
