Double Chocolate Hazelnut (a.k.a. Heaven) Cookies



I made these cookies a couple of weeks ago, adapted from a recipe in Sofie Dumont's Goe Gebakken, Deel 2, a collection of recipes from a Flemmish baking show. However, I up-ed the cocoa powder quite a bit, subbed in some whole wheat flour and switched out the peanuts for hazelnuts. The result was heavenly. I always find the combination of chocolate and roasted hazelnuts irresistible. Enjoy!




Here's the Recipe:



Double Chocolate Hazelnut (a.k.a. Heaven) Cookies

1 cup soft butter
1 cup white sugar
1 cup dark brown sugar
2 eggs
Splash vanilla and a few dashes of salt

1 2/3 c unbleached flour
1 cup whole wheat flour
1 tbsp bks.
1/3 cup + 2 tbsp cocoa powder

1 cup roasted hazelnuts, roughly chopped
1 cup chocolate chips

Directions:  
Cream butter and sugars. Mix in eggs, vanilla and salt. In a separate bowl, whisk dry ingredients. Then Gradually mix dry ingredients, hazelnuts, and chocolate chips into the butter mixture.

Arrange little balls of dough on buttered baking sheets, and press them down a bit, because they will not spread out and flatten during baking.

Bake in preheated oven at 350° for 8 min. Makes about 3 dozen.
