Cinnamon Honey Cookies

This is a beloved recipe of mine that I found many years ago, and have made ever since. They are simple cookies with just a touch of cinnamon and honey flavor, just how you'd think a honey cookie should taste. They are perfect for when you want something sweet, but not too sweet.




Ingredients:
½ cup butter, softened
½ cup brown sugar
½ cup creamed honey
1 egg
1 ½ cup flour
½ tsp baking soda
big pinch of salt
1 tsp cinnamon

Directions:
  1. Preheat your oven to 350 degrees F, and grease two large baking sheets with butter or canola oil.
  2. In a small bowl, whisk together the flour, baking soda, salt, and cinnamon. 
  3. In a large bowl, cream together the butter, brown sugar and honey, stir in the egg, and then stir in the dry ingredients, gradually.
  4. Scoop the dough in heaping teaspoonfuls onto the prepared pans with at least 1-2 inches in between each mound of dough. 
  5. Bake in preheated oven for 8 - 10 minutes, or until risen and set, and just beginning to brown.
  6. Repeat steps four and five until all the dough is used up. The cookies will be good for a few days in the fridge, but keep very well in the freezer!
