California Lemon Squares


These lemon squares are just the way I like them, sweet and tangy with a lot of lemon. The addition of the lemon zest adds that extra little boost of flavour.



Ingredients & Directions:

Crust:
1/2 cup icing sugar
1 cup butter
2 cups flour
1/2 tsp salt

- Mix the above ingredients & press into a 9 x 13 pan. Bake at 350º F for 20 minutes.

Filling:
4 eggs
1/4 cup flour
2 cups sugar
1/3 cup lemon juice & zest of 2 lemons

- Beat the eggs well. Whisk together the sugar, flour and lemon zest, and add to the beaten eggs. Add the lemon juice and mix well.
- Pour the filling mixture over the hot, baked crust and bake for a further 25 minutes. The surface will be golden brown and crusted over (not sticky.)
- Allow the squares to cool in the pan, and chill in fridge or freezer before cutting into squares so they cut a little more cleanly. Dust the squares with icing sugar.
